Description

Ingredients

  • 8 ounces of pasta
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cups cooked chicken, shredded
  • 2 cups frozen mixed vegetables (peas, corn, carrots)
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion, carrots, and celery and sauté until softened.
  3. Stir in shredded chicken and frozen mixed vegetables.
  4. Sprinkle flour over the mixture and stir to combine.
  5. Slowly add chicken broth while stirring constantly and bring to a simmer.
  6. Add heavy cream, thyme, salt, and pepper. Cook until thickened.
  7. Stir in cooked pasta and Parmesan cheese.
  8. Serve warm.
