A delicious and easy casserole featuring juicy shredded chicken topped with a fresh bruschetta mix for a perfect weeknight dinner.

- 1.5 lbs boneless skinless chicken breasts or thighs
- 2 tablespoons olive oil, divided
- 1 tablespoon extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- Salt to taste
- Freshly ground black pepper to taste
- 1/2 cup low sodium chicken broth or vegetable broth
- 1/2 cup plain Greek yogurt (full fat or 2%)
- 4 ounces light cream cheese (softened, optional)
- 1 cup shredded part skim mozzarella cheese, divided
- 1.5 lbs ripe Roma tomatoes, finely diced
- 3 to 4 cloves garlic, minced
- 1/2 cup fresh basil leaves, finely chopped or chiffonaded
- 2 tablespoons good quality balsamic vinegar
- 1/4 cup grated Parmesan cheese
- Optional: 2 tablespoons fresh parsley, chopped
- Optional: Balsamic glaze for drizzling
Instructions
- Preheat oven to 375°F (190°C). Season chicken with garlic powder, onion powder, oregano, salt, and pepper.
- Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear chicken until golden brown on both sides, about 2 to 3 minutes per side.
- Transfer chicken to a baking dish and bake until cooked through, about 15 to 20 minutes. Let rest for 5 minutes, then shred.
- Prepare bruschetta topping by mixing diced tomatoes, minced garlic, chopped basil, extra virgin olive oil, and balsamic vinegar. Season with a pinch of salt and pepper.
- In a bowl, combine shredded chicken, chicken broth, Greek yogurt, and cream cheese (if using). Stir until creamy.
- Transfer the chicken mixture to a greased baking dish and spread evenly. Sprinkle half of the mozzarella over the top. Bake for 10 minutes.
- Top with remaining mozzarella and Parmesan. Bake until cheese melts and bubbles, about 5 to 7 minutes. Optionally place under the broiler for a few moments.
- Remove from oven and spoon the bruschetta topping over the casserole. Let rest for 5 minutes before serving.
Notes
This casserole is forgiving; feel free to adjust seasonings and use leftovers as needed.
