Ingredients

  • 1 cup fresh pineapple, chopped
  • 1 cup shredded coconut
  • 1/4 cup honey or maple syrup (optional)
  • 1/4 cup almond flour (optional)

Instructions

  1. Prepare the pineapple: cut the fresh pineapple into small, roughly 1/4–1/2-inch pieces and pat lightly with a paper towel.
  2. In a mixing bowl, combine the chopped pineapple and shredded coconut, stirring gently.
  3. If using, add honey or maple syrup and almond flour; mix until a cohesive, slightly tacky mixture forms.
  4. Scoop out small portions and roll them into bite-sized balls.
  5. Place the bites on a parchment-lined tray and refrigerate for about 30 minutes.
