Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 cup shredded coconut
1 cup coconut milk
1/2 cup unsalted butter, softened
3 eggs
1 teaspoon baking powder
1/2 teaspoon salt

Instructions
Preheat the oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, cream together the butter, sugar, and eggs until light and fluffy.
Stir in the coconut milk and shredded coconut.
In a separate bowl, mix together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let cool completely in the pan.
Dust the top with powdered sugar before serving.
