Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup shredded coconut
- 1 cup coconut milk
- 1/2 cup unsalted butter, softened
- 3 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, cream together the butter, sugar, and eggs until light and fluffy.
- Stir in the coconut milk and shredded coconut.
- In a separate bowl, mix together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool completely in the pan.
- Dust the top with powdered sugar before serving.
