A cozy, slightly tropical cake loaf that’s soft, coconutty, and impressively easy to make.

- 2 cups all purpose flour
- 1 cup granulated sugar
- 1 cup shredded coconut
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Powdered sugar for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
- Fold in the shredded coconut.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
- Once cooled completely, sprinkle powdered sugar over the top before serving.
Notes
For a richer texture, use oat milk instead of regular milk. You can also substitute butter with a neutral oil, but flavor may vary.
