Description

A delightful coffee cake with cinnamon streusel that’s perfect for breakfast, dessert, or an afternoon snack, rich and inviting in flavor.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time to the creamed mixture, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, combine the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the creamed mixture alternately with the milk, beginning and ending with flour.
  5. Mix brown sugar, ground cinnamon, and a small amount of flour to create the streusel topping.
  6. Layer half of the batter in the prepared pan, sprinkle with half of the streusel mixture, then add the remaining batter and top with the remaining streusel.
  7. Bake for 35-40 minutes, checking with a toothpick for doneness.
  8. Allow the cake to cool in the pan before serving.
