Ingredients

- 1 cup 4% milkfat cottage cheese
- ¼ cup pure maple syrup
- 1 teaspoon vanilla
- 1 cup almond flour
- 2 tablespoons melted coconut oil
- ½ cup vanilla protein powder
- ½ cup chocolate chips, plus more for topping
Instructions
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a bowl, mix cottage cheese, maple syrup, coconut oil, and vanilla until smooth.
- In another bowl, combine almond flour and protein powder.
- Gradually add dry ingredients to wet ingredients and mix until combined.
- Fold in chocolate chips.
- Drop rounded tablespoons of dough onto the baking sheet.
- Bake for 12–15 minutes until edges are golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
If the dough feels too loose, chill it for 10–15 minutes before baking.
