Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • Garlic powder, to taste
  • Italian seasoning, to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9 or 10-inch pie plate or quiche dish.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and bell pepper; sauté for 5 to 7 minutes until soft.
  3. In a large mixing bowl, whisk together the cottage cheese, large eggs, and milk until well combined.
  4. Stir in garlic powder and Italian seasoning to taste.
  5. Fold in the sautéed vegetables, chopped spinach, and shredded cheese into the cottage cheese mixture.
  6. Pour the mixture into the prepared pie plate and bake for 45 to 60 minutes until golden brown and set.
  7. Allow to cool for 15 to 20 minutes before slicing and serving.
