- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, diced (Yukon Gold or Russet)
- 4 cups chicken broth
- 1 cup heavy cream (or half-and-half)
- 2 cups kale or spinach, chopped
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp crushed red pepper flakes (optional)
- 1 tbsp olive oil (if needed)
- 1/2 cup grated Parmesan cheese (for garnish)
Instructions
- Heat a large pot over medium heat. Add olive oil if sausage is lean, remove sausage from casing, crumble into pot, and cook until browned, about 5-7 minutes. Remove sausage and set aside.
- In the same pot, add onion and garlic, sauté until translucent, about 3-4 minutes. Add potatoes and cook for another 2 minutes.
- Pour in chicken broth, bring to a boil, reduce to a simmer, and cook until potatoes are tender, approximately 10-15 minutes.
- Return sausage to pot, stir in heavy cream and greens, season with salt, pepper, and red pepper flakes. Simmer for 5 minutes.
- Ladle soup into bowls, garnish with Parmesan cheese, and serve hot with crusty bread.
