Description

  • 2 lbs yellow squash, sliced thin
  • 1 medium onion, chopped
  • 2 large eggs
  • 1 cup cheddar cheese, shredded
  • ½ cup milk or sour cream
  • ¼ cup butter
  • 1 cup crushed buttery crackers (like Ritz)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp paprika
  • ½ tsp black pepper
  • 1 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sauté the sliced squash and chopped onion in butter over medium heat until softened, about 10 minutes. Drain any excess liquid.
  3. In a large mixing bowl, combine the sautéed vegetables with eggs, milk or sour cream, cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix until fully combined.
  4. Transfer the mixture to a greased casserole dish and spread evenly.
  5. Top with crushed buttery crackers and a bit of extra cheese if desired.
  6. Bake uncovered for 30–35 minutes, or until the top is golden brown and bubbly.
  7. Let cool for a few minutes before serving warm.

Notes

You can substitute sour cream for a richer flavor. For a crispier topping, broil for the last 2 minutes of baking. Great with roasted chicken or barbecue.
