2 cups cooked chicken, shredded
1 cup white cheddar cheese, shredded
1 apple, diced
1 can white beans, drained
1 cup chicken broth
1 onion, chopped
1 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper

Instructions
Prep your ingredients: Chop the onion finely, dice the apple into small pieces, rinse and drain the beans, and shred the chicken.
Combine ingredients: In a large pot, combine onion, white beans, diced apple, chicken broth, shredded chicken, chili powder, cumin, garlic powder, salt, and black pepper. Stir to combine.
Bring to a gentle simmer: Place the pot over medium heat and bring to a gentle simmer. Reduce heat to low, cover the pot, and let cook for 30–45 minutes, stirring every 8–10 minutes.
Taste and finish with cheese: After simmering, taste for seasoning, and adjust if necessary. Stir in the shredded white cheddar cheese until melted and creamy.
Serve and garnish: Ladle portions into bowls and top with shredded cheese, sour cream, cilantro, or crushed tortilla chips.
