- 2 cups cooked chicken, shredded
- 1 cup white cheddar cheese, shredded
- 1 apple, diced
- 1 can white beans, drained
- 1 cup chicken broth
- 1 onion, chopped
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Prep your ingredients: Chop the onion finely, dice the apple into small pieces, rinse and drain the beans, and shred the chicken.
- Combine ingredients: In a large pot, combine onion, white beans, diced apple, chicken broth, shredded chicken, chili powder, cumin, garlic powder, salt, and black pepper. Stir to combine.
- Bring to a gentle simmer: Place the pot over medium heat and bring to a gentle simmer. Reduce heat to low, cover the pot, and let cook for 30–45 minutes, stirring every 8–10 minutes.
- Taste and finish with cheese: After simmering, taste for seasoning, and adjust if necessary. Stir in the shredded white cheddar cheese until melted and creamy.
- Serve and garnish: Ladle portions into bowls and top with shredded cheese, sour cream, cilantro, or crushed tortilla chips.
Notes
Ideal for meal prep and can be made ahead. Freeze portions for later use.
