  • 1 cup white cheddar cheese, shredded
  • 1 apple, diced
  • 1 can white beans, drained
  • 1 cup chicken broth
  • 1 onion, chopped
  • 1 tsp chili powder

  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large pot or Dutch oven, combine the chopped onion, white beans, diced apple, chicken broth, shredded chicken, chili powder, cumin, garlic powder, salt, and black pepper. Stir well.
  2. Bring the mixture to a gentle simmer over medium heat, then reduce heat to low, cover, and let simmer for 30-45 minutes, stirring occasionally.
  3. Taste and adjust seasonings as needed, then stir in the shredded white cheddar cheese until melted.
