- 2 cups cooked chicken, shredded
- 1 cup white cheddar cheese, shredded
- 1 apple, diced
- 1 can white beans, drained
- 1 cup chicken broth
- 1 onion, chopped
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large pot or Dutch oven, combine the chopped onion, white beans, diced apple, chicken broth, shredded chicken, chili powder, cumin, garlic powder, salt, and black pepper. Stir well.
- Bring the mixture to a gentle simmer over medium heat, then reduce heat to low, cover, and let simmer for 30-45 minutes, stirring occasionally.
- Taste and adjust seasonings as needed, then stir in the shredded white cheddar cheese until melted.
- Ladle into bowls and garnish with additional cheese, sour cream, cilantro, and serve with tortilla chips or cornbread.
Notes
For a thicker consistency, chill the chili before storing. Use rotisserie chicken for quicker preparation.
