A light and refreshing dessert that combines sweet marshmallows and whipped topping with tangy cranberries for a festive treat.

- 1 (12 ounce) package cranberries (fresh or frozen)
- 12 packets Stevia Sweetener (equivalent to 1/2 cup sugar)
- 1 (8 ounce) can crushed pineapple, drained thoroughly
- 2 cups mini marshmallows
- 1 (8 ounce) container refrigerated lite whipped topping, thawed
- 1/2 cup chopped pecans (optional, toasted for extra flavor)
Instructions
- Rinse and prepare cranberries, discarding any soft or damaged berries.
- In a medium saucepan, combine the cranberries with Stevia and water. Bring to a simmer and cook for 8–10 minutes until most berries burst.
- Remove from heat and let the compote cool to room temperature, then refrigerate for at least 1 hour.
- Drain the crushed pineapple thoroughly and set aside.
- Combine cooled cranberry compote and drained pineapple in a large bowl.
- Fold in mini marshmallows gently.
- Add thawed whipped topping into the mixture in dollops and fold until homogenous.
- If using, fold in chopped pecans.
- Transfer the mixture to a serving dish and smooth the top.
- Cover and refrigerate for at least 4-12 hours before serving.
- Garnish before serving with fresh cranberry halves or nuts.
Notes
Ensure to drain pineapple well to avoid a watery fluff. Chilling the cranberry compote prevents the whipped topping from melting.
