- 1 (12 ounce) package cranberries
- 12 packets Stevia Sweetener (equal to 1/2 cup sugar)
- 1 (8 ounce) can crushed pineapple, drained
- 2 cups mini marshmallows
- 1 (8 ounce) container refrigerated lite whipped topping, thawed
- 1/2 cup chopped pecans
Instructions
- Rinse the cranberries under cool water and remove any soft berries or stems.
- In a medium saucepan, combine the cranberries with Stevia Sweetener and about 1/2 cup of water. Bring to a simmer over medium heat, stirring occasionally, and cook for 8 to 10 minutes until most cranberries have burst.
- Remove from heat and allow the cranberry compote to cool completely, then chill in the refrigerator for at least 1 hour.
- Drain the crushed pineapple in a fine mesh sieve for 15 to 20 minutes.
- Once chilled, combine the cranberry compote and drained pineapple in a mixing bowl.
- Add mini marshmallows to the mixture and stir gently.
- Fold in the thawed whipped topping until just combined.
- Optionally, add chopped pecans and gently fold into the mixture.
- Spoon the mixture into a serving dish and chill for at least 4 hours, preferably overnight.
- Garnish with fresh cranberry halves, toasted pecans, or mint before serving.
Notes
Chill thoroughly to maintain texture, and use drained pineapple to prevent excess moisture.
