Description

An effortless and festive dessert that’s bright, sweet, and a little tangy—a perfect treat for gatherings and potlucks.

Ingredients

Scale
  • 1 (12 ounce) package cranberries
  • 12 packets Stevia Sweetener (equal to 1/2 cup sugar)
  • 1 (8 ounce) can crushed pineapple, drained
  • 2 cups mini marshmallows
  • 1 (8 ounce) container refrigerated lite whipped topping, thawed
  • 1/2 cup chopped pecans

Instructions

  1. Rinse the cranberries under cool water and remove any soft berries or stems.
  2. In a medium saucepan, combine the cranberries with Stevia Sweetener and about 1/2 cup of water. Bring to a simmer over medium heat, stirring occasionally, and cook for 8 to 10 minutes until most cranberries have burst.
  3. Remove from heat and allow the cranberry compote to cool completely, then chill in the refrigerator for at least 1 hour.
  4. Drain the crushed pineapple in a fine mesh sieve for 15 to 20 minutes.
  5. Once chilled, combine the cranberry compote and drained pineapple in a mixing bowl.
  6. Add mini marshmallows to the mixture and stir gently.
  7. Fold in the thawed whipped topping until just combined.
  8. Optionally, add chopped pecans and gently fold into the mixture.
  9. Spoon the mixture into a serving dish and chill for at least 4 hours, preferably overnight.
  10. Garnish with fresh cranberry halves, toasted pecans, or mint before serving.

Notes

Chill thoroughly to maintain texture, and use drained pineapple to prevent excess moisture.
