A light and fluffy dessert that combines tart cranberries with sweet marshmallows, perfect for holiday gatherings.
Ingredients

- 1 (12 ounce) package cranberries
- 12 packets Stevia Sweetener (equal to 1/2 cup sugar)
- 1 (8 ounce) can crushed pineapple, drained
- 2 cups mini marshmallows
- 1 (8 ounce) container refrigerated lite whipped topping, thawed
- 1/2 cup chopped pecans
Instructions
- Rinse and prepare cranberries.
- Cook cranberries with Stevia in a saucepan until most cranberries burst, about 8-10 minutes.
- Cool the cranberry compote completely.
- Thoroughly drain pineapple.
- Combine cooled cranberries and drained pineapple in a bowl.
- Add mini marshmallows and stir gently.
- Fold in the thawed whipped topping until just combined.
- If desired, incorporate chopped pecans gently.
- Transfer to a serving dish.
- Chill thoroughly in the refrigerator for at least 4 hours.
- Garnish and serve chilled.
Notes
Store in an airtight container in the refrigerator for 3-4 days. Can be made 1-2 days in advance but not recommended for freezing.
