Description

A light and fluffy dessert that combines tart cranberries with sweet marshmallows, perfect for holiday gatherings.


Ingredients

  • 1 (12 ounce) package cranberries
  • 12 packets Stevia Sweetener (equal to 1/2 cup sugar)
  • 1 (8 ounce) can crushed pineapple, drained
  • 2 cups mini marshmallows
  • 1 (8 ounce) container refrigerated lite whipped topping, thawed
  • 1/2 cup chopped pecans

Instructions

  1. Rinse and prepare cranberries.
  2. Cook cranberries with Stevia in a saucepan until most cranberries burst, about 8-10 minutes.
  3. Cool the cranberry compote completely.
  4. Thoroughly drain pineapple.
  5. Combine cooled cranberries and drained pineapple in a bowl.
  6. Add mini marshmallows and stir gently.
  7. Fold in the thawed whipped topping until just combined.
  8. If desired, incorporate chopped pecans gently.
  9. Transfer to a serving dish.
  10. Chill thoroughly in the refrigerator for at least 4 hours.
  11. Garnish and serve chilled.

Notes

Store in an airtight container in the refrigerator for 3-4 days. Can be made 1-2 days in advance but not recommended for freezing.
