Ingredients

  • 2 cups cranberries
  • ½ cup sugar
  • ¼ cup orange juice
  • 1 tsp orange zest
  • 1 tsp vanilla
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • ¼ cup chopped pistachios

Instructions

  1. Cook cranberries, sugar, orange juice, orange zest, and vanilla in a saucepan until thickened (about 10 minutes). Cool.
  2. Whip heavy cream in a bowl until soft peaks form.
  3. In another bowl, beat mascarpone, powdered sugar, and vanilla extract until smooth.
  4. Fold whipped cream into the mascarpone mixture until smooth.
  5. Layer cranberry compote and mascarpone mousse in individual cups, starting with cranberry and ending with mousse.
  6. Chill in the refrigerator for at least 1 hour and garnish with chopped pistachios before serving.
