A light and elegant holiday dessert featuring creamy mascarpone layered with tart cranberry compote, topped with pistachios.
Ingredients

- 2 cups cranberries
- ½ cup sugar
- ¼ cup orange juice
- 1 tsp orange zest
- 1 tsp vanilla
- 1 cup mascarpone cheese
- 1 cup heavy cream
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- ¼ cup chopped pistachios
Instructions
- Cook cranberries, sugar, orange juice, orange zest, and vanilla in a saucepan until thickened (about 10 minutes). Cool.
- Whip heavy cream in a bowl until soft peaks form.
- In another bowl, beat mascarpone, powdered sugar, and vanilla extract until smooth.
- Fold whipped cream into the mascarpone mixture until smooth.
- Layer cranberry compote and mascarpone mousse in individual cups, starting with cranberry and ending with mousse.
- Chill in the refrigerator for at least 1 hour and garnish with chopped pistachios before serving.
Notes
Use fresh cranberries for best flavor. These mousse cups can be prepared a day in advance.
