Ingredients

  • 1 cup pistachios
  • 1 cup Medjool dates, pitted
  • ½ cup dried cranberries
  • ¼ cup oats (optional)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tbsp honey or maple syrup (optional)

Instructions

  1. Pulse the pistachios in a food processor until finely chopped.
  2. Add the pitted Medjool dates, dried cranberries, oats (if using), vanilla extract, and a pinch of salt. Blend until sticky.
  3. If desired, add honey or maple syrup and blend again.
  4. Roll the mixture into small balls with your hands.
  5. Chill the bites in the refrigerator for about 20 minutes.
  6. Store in an airtight container in the fridge for up to 1 week.
