Ingredients

- 1 cup pistachios
- 1 cup Medjool dates, pitted
- ½ cup dried cranberries
- ¼ cup oats (optional)
- 1 tsp vanilla extract
- Pinch of salt
- 1 tbsp honey or maple syrup (optional)
Instructions
- Pulse the pistachios in a food processor until finely chopped.
- Add the pitted Medjool dates, dried cranberries, oats (if using), vanilla extract, and a pinch of salt. Blend until sticky.
- If desired, add honey or maple syrup and blend again.
- Roll the mixture into small balls with your hands.
- Chill the bites in the refrigerator for about 20 minutes.
- Store in an airtight container in the fridge for up to 1 week.
