- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon lemon zest
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract
- 1 cup fresh or dried cranberries
- 1/2 cup chopped pistachios
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream the butter and sugar until fluffy. Add the eggs one at a time, mixing well after each. Stir in lemon zest, lemon juice, and vanilla.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in cranberries and pistachios.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan before transferring to a wire rack.
Notes
Let the loaf cool before slicing to avoid crumbling. Feel free to use alternative nuts or fruits based on availability.
