Ingredients

  • 1 cup fresh cranberries
  • 1/2 cup pistachios, chopped
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Cream together butter and sugar until light and fluffy.
  3. Add eggs, vanilla extract, and lemon zest; mix until combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture, alternating with lemon juice.
  6. Fold in cranberries and pistachios gently.
