Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Cream together butter and sugar until light and fluffy.
- Add eggs, vanilla extract, and lemon zest; mix until combined.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, alternating with lemon juice.
- Fold in cranberries and pistachios gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
Use fresh cranberries for best results. If using frozen, lightly flour them first.
