Ingredients
1 cup quinoa
2 cups water
1 cup fresh kale, chopped
1 cup cranberries, dried or fresh
1/2 cup feta cheese, crumbled
1/4 cup almonds or walnuts, chopped
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste

Instructions
Rinse the quinoa under cold water and combine it with water in a saucepan. Bring to a boil, then reduce to a simmer, cover, and cook for about 15-20 minutes until fluffy.
In a large bowl, combine the cooked quinoa, chopped kale, cranberries, feta cheese, and nuts.
In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
Drizzle the dressing over the salad and toss to combine.
Serve chilled or at room temperature.
