Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup fresh kale, chopped
- 1 cup cranberries, dried or fresh
- 1/2 cup feta cheese, crumbled
- 1/4 cup almonds or walnuts, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water and combine it with water in a saucepan. Bring to a boil, then reduce to a simmer, cover, and cook for about 15-20 minutes until fluffy.
- In a large bowl, combine the cooked quinoa, chopped kale, cranberries, feta cheese, and nuts.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
