Description
A refreshing cocktail that combines tart cranberry, bright lemon, and herby thyme, topped with a fluffy vanilla foam.
Ingredients

- 2 oz gin
- 1 oz cranberry juice
- 1/2 oz fresh lemon juice
- 1 oz simple syrup
- Club soda, to top
- Fresh thyme sprigs, for garnish
- For the vanilla foam:
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1 tbsp powdered sugar
Instructions
- In a shaker, combine gin, cranberry juice, lemon juice, and simple syrup with ice. Shake well.
- Strain into a glass filled with ice and top with club soda.
- To make the vanilla foam, whip the heavy cream with vanilla extract and powdered sugar until soft peaks form.
- Spoon the foam over the cocktail and garnish with a sprig of fresh thyme. Enjoy!
Notes
Make the foam shortly before serving. Over-sweetened? Add more simple syrup. Too tart? Adjust to taste.
