Ingredients

- 1 pound mushrooms, sliced
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup white wine
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- In a large pot, melt the butter over medium heat.
- Add the sliced mushrooms and garlic, sautéing until the mushrooms are tender and golden brown.
- Pour in the white wine and let it simmer until reduced by half.
- Add the broth and bring to a boil, then reduce heat and simmer for 15 minutes.
- Blend the soup until smooth using an immersion blender or in batches in a regular blender.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, garnished with fresh herbs if desired.
Notes
For a lighter version, you can use half-and-half instead of heavy cream. Adjust the thickness of the soup by adding more or less broth.
