- 4 medium potatoes, diced
- 6 slices of bacon, chopped
- 1 medium onion, diced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- In a crockpot, cook the bacon until crispy. Remove and set aside.
- Add diced potatoes, onion, and chicken broth to the crockpot.
- Cover and cook on low for 360 minutes or on high for 180 minutes, until the potatoes are tender.
- Stir in the heavy cream and cheddar cheese, and season with salt and pepper.
- Cook for an additional 30 minutes on low until heated through.
- Serve hot, topped with crispy bacon and garnish with chives or green onions.
Notes
For a vegetarian version, omit bacon and use smoked paprika for flavor.
