Ingredients

  • 1 pound chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup orzo pasta
  • 1 cup basil pesto
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat until shimmering.
  2. Add diced chicken, season with salt and pepper, and cook until browned, about 5–7 minutes.
  3. Stir in halved cherry tomatoes and spinach; cook until spinach wilts, about 2–3 minutes.
  4. Add orzo and enough water or chicken broth to cover by 1/2 inch. Bring to a gentle simmer.
  5. Cook orzo, stirring occasionally, until tender and liquid is absorbed, about 8–10 minutes.
  6. Reduce heat to low and stir in basil pesto until well combined. Let warm through for a minute.
