- 1 pound chicken breast, diced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 cup orzo pasta
- 1 cup basil pesto
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat until shimmering.
- Add diced chicken, season with salt and pepper, and cook until browned, about 5–7 minutes.
- Stir in halved cherry tomatoes and spinach; cook until spinach wilts, about 2–3 minutes.
- Add orzo and enough water or chicken broth to cover by 1/2 inch. Bring to a gentle simmer.
- Cook orzo, stirring occasionally, until tender and liquid is absorbed, about 8–10 minutes.
- Reduce heat to low and stir in basil pesto until well combined. Let warm through for a minute.
- Taste and adjust seasoning as needed. Serve hot and enjoy!
