Ingredients

  • 1 medium butternut squash, peeled and diced
  • 1 pound Italian sausage, crumbled
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the onion and cook until softened.
  2. Add the garlic and crumbled sausage, cooking until the sausage is browned.
  3. Stir in the butternut squash and cook for about 5 minutes until slightly tender.
  4. Add the gnocchi to the skillet and pour in the heavy cream, thyme, and sage.
  5. Stir to combine and cook until the squash is soft and the gnocchi is heated through, about 10 minutes.
