Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces fettuccine pasta
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season both sides of the chicken breasts with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Once the oil is hot, place the chicken breasts in the skillet. Cook for 6 to 7 minutes per side until golden brown and cooked through.
  4. Remove the chicken from the skillet and let it rest on a cutting board for a few minutes.
  5. In the same skillet, melt the butter over medium heat.
  6. Add the minced garlic and sauté for 1 to 2 minutes until fragrant and slightly golden.
  7. Pour in the heavy cream and chicken broth, stirring to combine.
  8. Bring the mixture to a simmer and cook for 3 to 4 minutes to thicken slightly.
  9. Add the grated Parmesan cheese, stirring until melted and smooth.
  10. Cook the fettuccine pasta according to package directions, then drain and reserve about 1/2 cup of pasta water.
  11. Slice the rested chicken into thin strips.
  12. Add the drained pasta to the skillet and toss to coat with the sauce.
  13. If the sauce is too thick, add reserved pasta water one tablespoon at a time until desired consistency.
  14. Stir in chopped parsley and lemon juice, adding sliced chicken on top.
  15. Toss everything together until well combined and heated through.
  16. Serve immediately, garnished with extra parsley if desired.

Notes

For extra flavor, add more Cajun seasoning or crushed red pepper flakes. You can substitute half-and-half for a lighter version, and add vegetables like spinach for extra nutrition.
