Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can enchilada sauce
  • 4 cups chicken broth
  • 1 cup heavy cream or sour cream
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla strips for garnish
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, sauté diced onion and minced garlic over medium heat until softened.
  2. Add shredded chicken, enchilada sauce, chicken broth, black beans, corn, cumin, chili powder, salt, and pepper. Stir to combine.
  3. Bring the mixture to a simmer, then lower the heat and cook for about 15 minutes.
  4. Stir in heavy cream or sour cream and gently heat through.
  5. Serve hot, garnished with tortilla strips and cilantro.
