Instructions
- In a large pot, sauté diced onion and minced garlic over medium heat until softened.
- Add shredded chicken, enchilada sauce, chicken broth, black beans, corn, cumin, chili powder, salt, and pepper. Stir to combine.
- Bring the mixture to a simmer, then lower the heat and cook for about 15 minutes.
- Stir in heavy cream or sour cream and gently heat through.
- Serve hot, garnished with tortilla strips and cilantro.
