Ingredients
Scale
- 1 cup orzo pasta
- 2 cups cooked chicken, shredded
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Parmesan cheese for serving (optional)
Instructions
- Prepare all ingredients before starting to streamline the cooking process.
- In a large pot, heat olive oil over medium heat and sauté the diced onion until translucent, about 3-5 minutes. Add minced garlic and cook for another minute.
- Add orzo and chicken broth to the pot. Stir to combine and bring to a boil.
- Reduce heat to medium-low and simmer for about 10 minutes, stirring occasionally.
- Incorporate cooked chicken, heavy cream, mixed vegetables, and thyme. Season with salt and pepper and stir until heated through, about 5 minutes.
- Serve in bowls and top with grated Parmesan cheese, if desired.
Notes
Let the dish sit for a few minutes off the heat before serving to allow the sauce to thicken.
