A comforting soup infused with aromatic spices and creamy coconut milk, packed with lentils and chickpeas.
Ingredients

- 1 ½ cups diced onion
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- Green chilies (to taste)
- 1 tablespoon olive oil or coconut oil
- 1 teaspoon cumin
- 1 teaspoon coriander

- 1 teaspoon smoked paprika
- 1 teaspoon cayenne (optional)
- 1 can diced tomatoes (undrained)
- 1 cup rinsed red lentils
- 1 can drained chickpeas
- 4 cups vegetable broth
- 1 can full-fat coconut milk
- 2 cups chopped fresh spinach
- Salt and black pepper (to taste)
- Juice of half a lime or lemon
- Fresh cilantro or parsley (for garnish)
- Yogurt or coconut cream (optional, for serving)
- Red pepper flakes (optional, for serving)
- Naan or baguette (optional, for serving)
Instructions
- Prepare your ingredients by dicing the onion, mincing garlic, and grating ginger.
- Combine dry spices in a bowl: cumin, coriander, turmeric, smoked paprika, and cayenne.
- Heat olive oil in a pot and cook onions for 5-7 minutes until tender.
- Add garlic, ginger, and green chilies, stirring for 1 minute until fragrant.
- Sprinkle in the spice blend and stir for 30 seconds to 1 minute.
- Add diced tomatoes and scrape the pot. Simmer for 2-3 minutes.
- Add lentils and chickpeas, stirring to coat in the mixture.
- Pour in vegetable broth, bring to a boil, then reduce heat and cover. Simmer for 15-20 minutes or until lentils are tender.
- Stir in coconut milk and simmer for an additional 5-7 minutes.
- Add spinach and stir until wilted.
- Season with salt, pepper, and lime/lemon juice. Serve and garnish with herbs and optional toppings.
Notes
Adjust spices according to your taste. This soup can be stored in the refrigerator for up to 4 days or frozen for 2 months.
