- 4 boneless, skinless chicken breasts (or thighs)
- 4 cloves garlic, minced
- 1 ½ cups heavy cream (or coconut cream for dairy-free)
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon each: dried thyme, rosemary, and parsley (or fresh equivalents)
- ½ cup grated parmesan cheese (optional)
- Optional: red pepper flakes for a spicy kick
Instructions
- Prep the Chicken: Pound chicken breasts to an even thickness. Season both sides with salt, pepper, and some of the herbs.
- Sear the Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.
- Make the Creamy Herb Sauce: Lower heat to medium. Sauté garlic until fragrant. Add cream and remaining herbs. Stir in parmesan (if using) and simmer until slightly thickened.
- Simmer Together: Return chicken to the pan and simmer for 7–10 minutes until fully cooked and sauce is creamy.
- Serve: Garnish with fresh parsley and serve hot with mashed potatoes, rice, or vegetables.
Notes
For extra flavor, deglaze the pan with a splash of white wine before adding the cream. Coconut cream can be used for a dairy-free version, and parmesan is optional but adds depth.
