- 2 boneless skinless chicken breasts
- 8 oz rotini pasta
- 3 garlic cloves, minced
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon fresh chopped parsley (optional)
Instructions
- Trim and pat dry the chicken breasts. Season both sides generously with salt, pepper, and Italian seasoning.
- In a skillet, heat olive oil over medium-high heat. Sear the seasoned chicken for 5-6 minutes per side until golden brown and cooked through. Remove from the skillet and let it rest.
- Boil the rotini pasta according to package directions. Once done, drain and toss with a little butter to prevent sticking.
- In the same skillet, add butter and minced garlic. Sauté for about 30 seconds or until fragrant.
- Add heavy cream to the skillet and simmer for 3-4 minutes. Gradually stir in the grated Parmesan cheese until melted and the sauce is smooth.
- Slice the rested chicken into strips. Toss the cooked pasta in the creamy sauce until fully coated.
- Plate the pasta, then top with the sliced chicken. Drizzle with extra sauce if desired, and garnish with fresh chopped parsley.
Notes
Use freshly grated Parmesan for a smoother sauce. Add sautéed mushrooms or spinach for extra flavor. For a vegetarian option, substitute chicken with sautéed mushrooms or plant-based protein.
