- 400g spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken or vegetable broth
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
- 1 tablespoon butter
- Optional: Red pepper flakes for garnish
Instructions
- Cook Pasta: Cook spaghetti in salted boiling water until al dente. Reserve ¼ cup of pasta water and drain.
- Sauté Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1–2 minutes, just until fragrant (don’t let it brown).
- Make Sauce: Pour in the heavy cream and broth, then bring to a gentle simmer.
- Add Cheese: Reduce heat to low and stir in Parmesan cheese in batches until fully melted and smooth.
- Season: Season with salt and pepper to taste.
- Combine: Add cooked spaghetti to the sauce, tossing to coat evenly. Use reserved pasta water to loosen if needed.
- Finish: Stir in butter and parsley. Serve immediately, garnished with extra Parmesan and red pepper flakes if desired.
Notes
For extra richness, add a splash of white wine before simmering the cream. Substitute with light cream for a lighter version.
