Instructions
- Cook the gnocchi according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the fresh spinach to the skillet, stirring until wilted.
- Stir in the heavy cream and bring to a gentle simmer.
- Add the cooked gnocchi and crumbled feta, tossing until well combined.
- Season with salt and pepper to taste and serve hot, topped with grated Parmesan if desired.
Notes
For a richer flavor, add toasted pine nuts or walnuts. To keep the spinach vibrant, avoid overcooking it.
