Ingredients

  • 4 portions Salmon fillets, seasoned with salt, pepper, and Italian seasoning
  • Salt and black pepper, to taste
  • 12 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 23 garlic cloves, minced
  • 1 can (about 15 oz) white beans (cannellini or butter beans), drained and rinsed
  • 1/31/2 cup sun-dried tomatoes, chopped
  • 3/41 cup chicken or vegetable broth
  • 1/23/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 2 cups fresh spinach, roughly chopped
  • Chopped fresh parsley or thyme, for garnish

Instructions

  1. Season salmon with salt, pepper, and Italian seasoning.
  2. Heat olive oil and butter in skillet. Sear salmon 3–4 minutes per side, then remove.
  3. Sauté onion and garlic until fragrant.
  4. Stir in beans, sun-dried tomatoes, broth, and cream. Simmer for 5 minutes.
  5. Add parmesan and spinach. Stir until spinach wilts.
  6. Return salmon, spoon sauce over, and cook for 2 more minutes.
  7. Garnish with parsley or thyme and serve warm.

Notes

For best results, avoid overcooking the salmon by monitoring closely when returning it to the sauce.
