A cozy, restaurant-style dish that combines quick cooking orzo with flavorful shrimp in a creamy parmesan sauce, all made in one pan for easy cleanup.

- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 2 ½ cups low-sodium chicken broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk or half-and-half
- Fresh parsley or chives for garnish
Instructions
- Pat the shrimp dry with paper towels and toss with olive oil, paprika, garlic powder, salt, and pepper.
- Heat a skillet over medium-high heat and sear the shrimp for 1–2 minutes per side until opaque and lightly browned, then set aside.
- In the same skillet, reduce heat to medium and add butter and olive oil, then sauté onions for 3–4 minutes until soft.
- Add minced garlic and cook for about 30 seconds until fragrant.
- Stir in orzo and toast for 1 minute, stirring constantly.
- Pour in chicken broth, scraping the bottom of the skillet to lift any fond, and bring to a gentle simmer.
- Cover and simmer for 8–10 minutes until orzo is tender and most liquid is absorbed.
- Reduce heat to low, stir in Parmesan cheese and milk until creamy, adjusting consistency with broth if needed.
- Return shrimp to the pan and warm through for a minute or two.
- Garnish with parsley or chives and serve hot.
Notes
For best results, use larger shrimp and don’t skip toasting the orzo. Leftovers can be stored in an airtight container for 2–3 days in the refrigerator.
