Ingredients

  • 1 pound sausage (Italian or smoked, sliced)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sausage and cook until browned. Remove and set aside.
  3. In the same pot, add diced onion and garlic; sauté until soft.
  4. Stir in the potatoes and broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  5. Use a potato masher or blender to blend part of the soup for a chunky texture.
  6. Stir in the heavy cream and cooked sausage.
  7. Season with salt and pepper.
  8. Serve hot, garnished with fresh parsley if desired.

Notes

For a spicier kick, use hot Italian sausage. You can add vegetables like carrots or corn for extra flavor.
