- 1 pound sausage (Italian or smoked, sliced)
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 3 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the sausage and cook until browned. Remove and set aside.
- In the same pot, add diced onion and garlic; sauté until soft.
- Stir in the potatoes and broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Use a potato masher or blender to blend part of the soup for a chunky texture.
- Stir in the heavy cream and cooked sausage.
- Season with salt and pepper.
- Serve hot, garnished with fresh parsley if desired.
Notes
For a spicier kick, use hot Italian sausage. You can add vegetables like carrots or corn for extra flavor.
