- 4 large potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- 4 slices bacon, cooked and crumbled
- Salt and pepper to taste
- Chives for garnish (optional)
Instructions
- In a large pot, combine the diced potatoes and chicken broth. Bring to a boil and then reduce to a simmer until the potatoes are tender, about 15-20 minutes.
- Use a potato masher or immersion blender to blend the soup to your desired consistency.
- Stir in the heavy cream, half of the cheddar cheese, and crumbled bacon.
- Season with salt and pepper to taste. Heat through until warmed.
- Serve hot, garnished with the remaining cheese and chives if desired.
Notes
For a thicker soup, blend it longer until it’s smooth. If you prefer a chunkier texture, blend only half of the soup. Experiment with different types of cheese for varied flavors.
