- For the cream cheese filling:
- 8 oz cream cheese, at room temperature
- 1/4 cup salted butter, softened
- 1 tsp vanilla extract
- 1/8 tsp ground cinnamon
- Pinch sea salt
- 3 cups powdered sugar
Instructions
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper and lightly grease it.
- In a large mixing bowl, whisk together flour, baking powder, baking soda, ground cinnamon, pumpkin pie spice blend, and salt.
- In another bowl, beat the eggs and granulated sugar until thick and creamy.
- Stir in pumpkin puree and vanilla extract.
- Gradually add dry ingredients, mixing until just combined.
- Spread batter evenly onto prepared baking sheet. Bake for about 13–15 minutes.
- Remove cake from oven and let it sit for a minute. Turn onto a kitchen towel dusted with powdered sugar and peel off parchment.
- Starting from a short side, roll up the cake with the towel. Place on a wire rack to cool completely.
- For the filling, beat together cream cheese, butter, vanilla extract, ground cinnamon, and sea salt until smooth. Gradually add powdered sugar and mix until creamy.
- Unroll the cooled cake and spread the filling evenly over it. Roll the cake back up without the towel.
- Wrap in plastic wrap and chill in the refrigerator for at least 1 hour before slicing and serving.
