  • 8 oz cream cheese, at room temperature
  • 1/4 cup salted butter, softened
  • 1 tsp vanilla extract
  • 1/8 tsp ground cinnamon
  • Pinch sea salt
  • 3 cups powdered sugar

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper and lightly grease it.
  3. In a large mixing bowl, whisk together flour, baking powder, baking soda, ground cinnamon, pumpkin pie spice blend, and salt.
  4. In another bowl, beat the eggs and granulated sugar until thick and creamy.
  5. Stir in pumpkin puree and vanilla extract.
  6. Gradually add dry ingredients, mixing until just combined.
  7. Spread batter evenly onto prepared baking sheet. Bake for about 13–15 minutes.
  8. Remove cake from oven and let it sit for a minute. Turn onto a kitchen towel dusted with powdered sugar and peel off parchment.
  9. Starting from a short side, roll up the cake with the towel. Place on a wire rack to cool completely.
  10. For the filling, beat together cream cheese, butter, vanilla extract, ground cinnamon, and sea salt until smooth. Gradually add powdered sugar and mix until creamy.
  11. Unroll the cooled cake and spread the filling evenly over it. Roll the cake back up without the towel.
  12. Wrap in plastic wrap and chill in the refrigerator for at least 1 hour before slicing and serving.
