- 2 cups fresh spinach

- 1 cup heavy cream
- 1 tablespoon olive oil

- Grated Parmesan cheese for serving
Instructions
- In a large pan, heat olive oil over medium heat.
- Add the Italian sausage and cook until browned.
- Stir in the minced garlic and cook until fragrant (about 1 minute).
- Add the diced tomatoes and heavy cream, stirring to combine.
- Bring the mixture to a simmer and season with salt and pepper.
- Meanwhile, cook the rigatoni according to package instructions. Drain and set aside.
- Once the sauce is simmering, add the fresh spinach and cook until wilted.
- Add the cooked rigatoni to the pan and toss to coat.
