Ingredients

  • 1 lb smoked sausage, sliced
  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced smoked sausage and sauté until golden brown and crispy, about 5 to 7 minutes.
  3. Add the diced onion and cook for 2 to 3 minutes until translucent, then add the minced garlic and sauté for another minute.
  4. Pour in the heavy cream and chicken broth, stirring well to combine. Allow the mixture to simmer for about 5 minutes.
  5. Sprinkle in the Italian seasoning, paprika, and season with salt and pepper to taste.
  6. Gently fold the cooked penne pasta into the sauce, ensuring it is well coated.
  7. Stir in the shredded mozzarella cheese and continue to cook until melted and creamy.
  8. Remove from heat and serve, garnished with chopped parsley.
