Description

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • 1 tbsp butter

For the Creamy Sauce:

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced (optional)
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half)
  • ½ tsp dried thyme (or Italian seasoning)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded cheddar cheese (or Parmesan)

For the Rice:

  • 1 cup long-grain white rice (or brown rice)
  • 2 cups chicken broth or water
  • 1 tbsp butter

Instructions

  1. Cook the Rice: Bring 2 cups of broth and 1 tbsp butter to a boil. Add 1 cup rice, cover, and simmer — 15–18 minutes for white rice or 35–40 minutes for brown rice. Fluff with a fork and set aside.
  2. Season & Sear the Chicken: Pat chicken dry and season with salt, pepper, garlic powder, and smoked paprika. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.
  3. Make the Creamy Sauce: In the same skillet, sauté onions, garlic, and mushrooms for 2–3 minutes. Add chicken broth, scraping up any browned bits. Stir in cream, thyme, salt, and pepper. Simmer for 3–4 minutes. Stir in shredded cheese until melted and smooth.
  4. Smother the Chicken: Return chicken to the skillet and spoon sauce over the top. Cover and simmer for 5–7 minutes, or until fully cooked (internal temp should reach 165°F). Serve hot over cooked rice.

Notes

You can substitute the cream with Greek yogurt or coconut cream for a lighter version. Add spinach or sun-dried tomatoes for extra flavor and color.
