- 1 medium yellow onion, finely diced
- 2 garlic cloves, minced
- 4 cups fresh spinach, rinsed and roughly chopped
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 can (14 oz) crushed or diced tomatoes
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 1 package (9-12 oz) fresh tortellini
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Sauté the diced onion for 5-7 minutes until translucent.
- Add minced garlic, cook for 1 minute, then add Italian seasoning and red pepper flakes.
- Stir in canned tomatoes and simmer for 15-20 minutes.
- Add fresh spinach and wilt for 2-3 minutes.
- Reduce heat, stir in heavy cream and grated cheese until combined.
- Season sauce with salt and pepper to taste.
- Cook tortellini in salted boiling water according to package directions.
- Combine cooked tortellini with the sauce, tossing gently to coat.
- Serve warm, garnished with extra cheese and fresh basil if desired.
Notes
For a dairy-free version, substitute heavy cream with coconut cream. You can also add proteins like grilled chicken or shrimp for an extra boost.
