Ingredients

  • 1 medium yellow onion, finely diced
  • 2 garlic cloves, minced
  • 4 cups fresh spinach, rinsed and roughly chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 can (14 oz) crushed or diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 package (9-12 oz) fresh tortellini

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Sauté the diced onion for 5-7 minutes until translucent.
  3. Add minced garlic, cook for 1 minute, then add Italian seasoning and red pepper flakes.
  4. Stir in canned tomatoes and simmer for 15-20 minutes.
  5. Add fresh spinach and wilt for 2-3 minutes.
  6. Reduce heat, stir in heavy cream and grated cheese until combined.
  7. Season sauce with salt and pepper to taste.
  8. Cook tortellini in salted boiling water according to package directions.
  9. Combine cooked tortellini with the sauce, tossing gently to coat.
  10. Serve warm, garnished with extra cheese and fresh basil if desired.

Notes

For a dairy-free version, substitute heavy cream with coconut cream. You can also add proteins like grilled chicken or shrimp for an extra boost.
