- 8 oz penne or fettuccine pasta
- 4 cloves fresh garlic, minced
- 1 can (14.5 oz) diced tomatoes (no added sugar)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Fill a large pot with salted water and bring to a boil. Add the pasta and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the canned diced tomatoes (undrained) to the skillet. Simmer for 10-15 minutes, seasoning with salt and pepper.
- Stir in heavy cream and Parmesan cheese into the tomato mixture, ensuring it’s melted and fully incorporated.
- Add the cooked pasta to the skillet and toss to coat. Use reserved pasta water if needed to adjust the sauce consistency. Serve immediately, garnished with more Parmesan if desired.
