  • 1 can (14.5 oz) diced tomatoes (no added sugar)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Fill a large pot with salted water and bring to a boil. Add the pasta and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the canned diced tomatoes (undrained) to the skillet. Simmer for 10-15 minutes, seasoning with salt and pepper.
